Pork and Vegetable Stew

 


Y'all know I keep my eyes open for a great deal when it comes to food and grocery shopping.  Yesterday at Sam's, I found pork stew meat for $1.98/lb.! Yes, the package weighed in at 4.25 lbs. but I will use the remainder for carnitas and for pork fried rice!

This afternoon I was able to spend time in my kitchen and enjoy cooking. It seems like the more time I NEED my kitchen time, the less time I have to do just that.  I really enjoyed cooking today.

If you can't find pork stew meat, buy a boneless Boston Butt and cut into chunks yourself. I used Better than Bouillon Ham Base to make the broth.


This stew starts out by browning the cubed pork, sauteing the vegetables, and then simmering the stew for a couple of hours.  

2 - 3 T. olive oil, divided
2 - 2 1/2 lb. pork stew meat, cut into 1/2" cubes
Kosher salt
freshly ground black pepper
1 yellow onion, chopped
3 medium carrots, peeled and sliced
3 ribs celery, sliced
8 oz. white mushrooms
3 cloves garlic, minced
1 t. dried thyme
4 cups water with 1 T. Better Than Bouillon ham base dissolved in the water
3 potatoes, peeled and cubed
1 can white navy beans, rinsed and drained
2 bay leaves
5 oz. bag baby spinach

In a large Dutch oven, heat 2 T. olive oil over medium-high heat.

Salt and pepper the cubed pork and then add it to the Dutch oven. Cook, stirring frequently until the pork has browned. Remove the pork to a bowl.

Add remaining olive oil to the Dutch oven and add onions, carrots, celery, and mushrooms.  Lightly salt and let vegetables cook until they begin to soften. Add garlic and dried thyme and cook for another minute or so. Continue to stir so that the vegetables don't stick.

Add the water with ham base, potatoes, and beans to the Dutch oven and bring to a boil. Add bay leaves and reduce heat so that the stew simmers.

Let cook for 1 - 2 hours until vegetables are tender. Remove the bay leaves from the stew. Add spinach to the stew and remove from heat. Let spinach soften (3 - 4 minutes) and taste to check seasoning.  Add salt and/or pepper if needed.  Serve immediately.
