Yellowstone Season 4 Premiere Meal: Cheesy Stuffed Mushrooms

To begin our second round of the Yellowstone Season 4 Premiere meals, I chose to follow a "steakhouse theme."  While the Chicken Fried Steak meal was homey and delicious, how about we begin the Steakhouse Meal with Cheesy Stuffed Mushrooms?  These are very simple to make and can be made quickly.  With the ingredient amounts listed below, I had 16 medium sized mushrooms.  If you need more for a party, it's super easy to double or triple the amounts.  To continue with the Western idea, I baked these on a cast iron griddle pan.  You can also use a rimmed baking sheet or a casserole dish.

16 -18 white mushrooms, cleaned and stems removed
3-4 oz. softened cream cheese
2 dashes salt
2 dashes black pepper
2 cloves garlic, minced
2 t. finely shredded parmesan cheese (plus more for topping)
1/4 t. chopped fresh chives (plus more for topping)

Preheat oven to 375 degrees F.

Place mushroom caps on baking sheet.  Combine the remaining ingredients in a small bowl.  Using a small spoon, fill the mushroom caps with the cheese mixture.

Bake for 14 - 16 minutes or until hot, cheese has melted, and the tops are browned.

Top with additional parmesan and chives.  Serve immediately.
