Grilled Diced Onion Burgers with Pepper Jack Cheese

 


Yesterday, Sweet Harold requested grilled burgers.  We discussed how we wanted them seasoned and what toppings sounded good.  There are a million and one ways to season/top a burger, right?

He suggested that I add diced onions to the meat BEFORE shaping into patties.  So that's what I did!  Seasoned with Hardin's Seasoning blend, these were delicious burgers.  The flavor of pepper jack cheese blended well with the smokiness of the seasoning.

1 1/2 lbs. ground chuck
1/2 cup diced yellow onion

In a medium bowl, mix the ground chuck with the diced yellow onion and seasoning and shape into 8 patties.

Preheat the grill and when the grates are hot, add the burgers to the grill and let the patties sear.  See all those bits of onion?  They give so much flavor to the burgers!


Lower the heat to medium-high heat.  Turn the burgers a quarter turn after a few minutes cooking.  This will give you some beautiful grill marks!


Cook the burgers to your desired doneness:  137 F. for medium and 165 F. for well done.  A few minutes before the burgers reach that temp, add the sliced cheese.  By the time the cheese gets all melty, the burgers will have reached the desired temp.


Of course, you need to butter the buns and place them on the grill for a few minutes to toast.  Serve with your favorite condiments.  We had a jar of my candied jalapenos and they were yummy in place of pickles.
