Y'all remember a few days ago, I grilled grouper for tacos and had the following toppings.
Well, I had a leftovers and I surely didn't want all those to go to waste, so I came up with a second round of tacos! Yes, I call the soft low carb tortillas "tacos" when they're all wrapped up around a yummy filling. Authentic, probably not, but you do you and I'll do me.
So this morning I searched in the freezer and found a one pound package of stew meat. Hmmm. I thawed for a bit and the added the stew meat into the InstantPot with 2 cups water, a tablespoon of beef bouillon, 2 t. minced garlic, and 3 T. of taco seasoning.
I closed the vent, set it to pressure cook for 12 minutes and then let it naturally release for 10 minutes.
Here's the result!
I strained the beef from the liquid and placed it into a bowl. It was so flavorful and extremely tender.
Then, all that was left to do was heat the low carb tortillas and refried beans.
I spread a layer of refried beans on the heated tortilla. Next was a nice helping of shredded Mexican blend cheese, diced red onions, some of the beef, cilantro, taco sauce, and pickled jalapeno slices.
