Ham and Red Pepper Spread


This spread/dip combines the delicious richness of ham with the sharp tanginess of roasted red peppers.  You can spread or dip this with crackers, Belgian endive or slices of toasted baugette.  It would be perfect as a dip for vegetables.

Time from start to finish?  15 minutes.  Now everybody has time for that.

1 1/2 cups diced ham
1 cup diced roasted red peppers
1/2 t. smoked paprika
1 T. sherry vinegar
8 oz. reduced fat cream cheese (Neufchatel), softened
1/4 cup chopped fresh parsley

Pulse ham, peppers, paprika and vinegar in a food processor until the ham is finely chopped.  Transfer the mixture to a medium bowl.  Add cream cheese and parsley.  Stir until smooth.
