So simple, so elegant, so delicious. I used a tiny bit of Creole cream cheese on top of miniature Melba toasts, a very small cooked shrimp and a little drop of my homemade red pepper jelly.
Start to finish? 10 minutes tops. You WILL want to make these. Trust me.
This recipe will make about 2 dozen.
4 T. reduced fat cream cheese (Neufachatel)
24 small Melba toast or whole wheat crackers
24 small cooked ^ peeled shrimp
1 T. pepper jelly
Spread 1/2 t. cream cheese on each toast or cracker. Top each with a shrimp and 1/8 t. pepper jelly.
