From Friday night's supper, there were leftover boiled new potatoes and boneless pork chops. What better way to serve those "leftovers" than to make a pork and potato hash for Sunday morning breakfast?
I cubed up the cold cooked potatoes and then heated a few tablespoons of coconut oil in a large skillet over high heat.
Then I added the potatoes to the hot oil and let them begin to brown. Lower the heat slightly, and don't start turning the potatoes until they are browning.
Continue cooking the potatoes until they are golden brown. Doesn't this look yummy?
Next I cubed up the boneless pork chops and added them to browned potatoes.
Increase heat slightly and let the pork heat through and brown just like the potatoes did. You'll want a nice crunchy crust on the pork to match the crunch of the potatoes.
