Believe it or not, this easy, one-skillet meal, which is packed with healthy chicken and apple sausage and vegetables, is the 8-year-old and 5-year-old grandsons' favorite meal! They requested this for dinner tonight and gobbled it up quickly.
If you'd rather, you could use your favorite smoked sausage (Conecuh for me!), but the flavors in the chicken and apple sausage are well suited for this dish. Here's the brand we used:
3 - 4 T. olive oil, divided
2 pounds small "baby" potatoes, cubed
2 (12 oz.) Chicken and Apple Smoked Chicken Sausage, sliced into 1/2 inch slices
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
1 medium green bell pepper, diced
1 small red onion, diced
1 t. minced garlic
In a large skillet, heat 1 T. olive oil over medium-high heat. Add potatoes, and frequently stirring, let potatoes cook until they are fork-tender. Remove from skillet, place in a bowl, and set aside.
Add 2 T. olive oil in the skillet, and carefully add the sliced sausage. Cook until the sausage browns on both sides. Stir the sausage frequently so that it doesn't burn, but you will want a little char on the pieces.
And remaining olive oil, along with the vegetables. Again, frequently stirring continue to cook until the vegetables become tender. Add the potatoes back into the skillet and stir to combine all the ingredients. Let the potatoes re-heat, lightly salt and pepper, and serve immediately.
**We discussed during the meal that perhaps sliced mushrooms would be a nice addition to the mix!
All of it sounds pretty good except bell pepper. I've never liked it and I'm afraid that won't change.
