Italian Style Baked Chicken Thighs


This is one of the easiest main course proteins you'll ever prepare.  Sam's Club had skinless/boneless chicken thighs on sale this week. I brought out one of my "old school" recipes and we all thoroughly loved the juicy tenderness of this meal.  I served mashed potatoes and steamed broccoli alongside.

The secret ingredient?  Italian Salad Dressing as the marinade. You can use any brand you prefer, but I used Wishbone Italian Salad Dressing.

12 boneless skinless chicken thighs
1 cup Italian salad dressing

That's it!

Place chicken thighs in a large Ziploc bag and pour in salad dressing. Carefully close the bag and refrigerate the chicken for 4 - 6 hours.  

Preheat oven to 375 degrees.  Spray a rimmed baking sheet with non-stick spray.

Using tongs, place chicken on the baking sheet in a single layer. Carefully pour remaining marinade over chicken thighs.  Bake for 30 - 35 minutes until chicken is cooked through.

Serve with your favorite comfort food sides!
