Zatarain's Savory Mushroom, Bacon and Roasted Garlic Adobo Rice

Zatarains has been a New Orleans tradition since 1889.  We're all familiar with their jambalaya, gumbo, and dirty rice mixes.  Those have been a staple in my pantry for years.  Recently, Zatarain's began offering a new line of mixes which are sure to become favorites of your family as well. 

The new Garden District Kitchen Roasted Garlic Adobo Brown Rice with Black Beans is inspired by the Caribbean influence in New Orleans' cuisine by combining the bold flavor of fire-roasted bell peppers, savory onions, and roasted garlic.  

I love black beans, so this product had my attention immediately. The kitchen smelled amazing while this recipe was simmering away on the stovetop.  You add bacon, mushrooms, red bell pepper, and the mix does the rest. 


Zatarain's provided a recipe to make from the mix.  This dish would be great even as a side dish for Taco Tuesdays or served alongside Jerk seasoned Pork. 

3 slices bacon, cut into 1/2 inch pieces
1/3 cup chopped red bell pepper
1 package Zatarain's Roasted Garlic Adobo Brown Rice with Black Beans
1 3/4 cup water
1 cup sliced mushrooms
2 T. finely chopped green onion

Cook bacon in medium skillet on medium-high heat until crisp.  Remove bacon with a slotted spoon.  Add bell pepper to skillet and let cook for 2 minutes, stirring frequently.  Reduce heat to low; cover and simmer for 8 minutes.

Return bacon and bell pepper to skillet.  Cook, uncovered, 2 minutes or until most of the water is absorbed and rice is tender, stirring occasionally.  Remove from heat and let stand 5 minutes.  Sprinkle with green onion before serving. 

My opinion?  I LOVED this dish.  I would love to make this again and add chicken or pork to make it a genuinely protein-packed main dish supper.  On second thought, I believe the next time I use this product, I'll add shrimp! So many different options to try!  Best of all?  Ready in 10 minutes.
