Chocolate Chip Zucchini Bread


I've posted this recipe before, but have had several requests to post it again.  With zucchini season coming up, make sure you save this one so you'll be ready!  This is a great way to get extra veggies in either your diet or for your kids or grandkids.

3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated zucchini (about two regular sized zucchini)
1 t. vanilla extract
3 cups all-purpose flour
1 T. cinnamon
1 t. baking soda
1/4 t. baking powder
1 t. salt
1/2 cup chopped pecans or almonds
1/2 cup mini semi-sweet chocolate chips

Preheat oven to 325 degrees.  Grease and flour two (8 x 4 inch) loaf pans.

In a large bowl, beat eggs until light and frothy.  Mix in oil and sugar.  Stir in zucchini and vanilla.

Combine flour, cinnamon, baking soda, baking powder, salt, and pecans.  Stir into egg mixture.  Gently stir in chocolate chips.  Divide batter into prepared pans.  

Bake in the preheated oven for 65 - 75 minutes or until a toothpick inserted into the center comes out clean.  Cool in pans for 10 pans and turn out onto a wire rack to complete cooling.
