Green Pea Salad

This is one of my favorite salads.  The secret for the fresh taste is to thaw the peas, dry them with paper towels, and then mix together with the other ingredients.  Don't cook the peas, just thaw.  Don't use canned peas because that will alter the texture of the salad.  Add more ham if you'd like.  And, as always, I won't judge you on the amount of bacon you use either!

1 (20 or 24 oz.) package frozen green peas (thawed)
1/4 cup finely chopped celery
1/4 cup finely chopped green bell pepper
1/2 cup mayonnaise
1/4 cup cubed ham
1/2 cup shredded sharp cheddar cheese
salt and pepper to taste
3 slices bacon, cooked, drained, and crumbled

Mix together all ingredients (except for the bacon) until well combined.  Refrigerate until ready to serve and top with the crumbled bacon just before serving.

  1. I would eat it, but if I made it......then I would have to eat it all. My hubby will not let a green pea pass his lips.
