Southern Cole Slaw


This was the slaw for our Easter meal this year.  Sometimes we all enjoy the convenience of a bagged slaw mix, but other times (especially on Easter!) I want to have an old fashioned Southern slaw which is exactly like the ones I grew up eating.

If you like a wetter slaw, add additional mayo or oil.  If you prefer one that is less wet, cut back on the mayo or oil.  This is a very forgiving recipe. 

3-4 cups chopped green cabbage
1/3 - 1/2 cup mayonnaise (I use Duke's)
2 T. apple cider vinegar 
1 - 2 T. vegetable oil
a few shakes each of salt and pepper
1/2 t. celery seeds (optional)

Add all ingredients to a medium bowl and stir to combine.  Refrigerate until ready to serve.
