Breakfast for Supper (with some help from the Air Fryer)


It was a night when I really couldn't decide what to prepare for supper.  Remembering when my mama couldn't decide, she would fix "breakfast for supper."  As I am still learning the ways of the air fryer, I knew I wanted to put it to work for our meal.

I preheated the air fryer for 5 minutes at 400 degrees F.

I used small "new" potatoes that I washed and then quartered.  I placed them on one of the air fryer racks leaving space in between the potatoes so the air can circulate.  The rack with the potatoes was placed on the lowest level.

For the bacon, I used thick sliced and cut the slices in half widthwise.  Again, remember to leave some space so that hot air can cook the bacon.  I put the two racks of bacon on top of the potatoes.  Of course, you know why!  The bacon drippings flavored the potatoes while cooking.

The bacon and potatoes cooked for 10 minutes at 400 degrees F.  Then I removed the racks with bacon and flipped the slices.  Back into the air fryer for another 5 minutes and we're all done.



Now while the bacon and potatoes were cooking, I made the scrambled eggs on the stovetop.  But not just plain scrambled eggs.  I melted a tablespoon of butter in a medium skillet and let it melt over medium heat.  Next, I added 1/3 cup finely diced ham to the melted butter and let it cook for 4 - 5 minutes until it began to develop a deep brown color.


You'll add lots of flavor from those browned bits in the skillet called "fond."  In a small bowl, I whisked 3 eggs with a splash of water and a dash of salt and black pepper.  The eggs went into the skillet with the browned ham and I lowered the heat to low.


Very gently, stir the eggs over and onto themselves with a rubber spatula. When the eggs are halfway cooked through, add a slice of American cheese.  Continue folding the egg curds over and onto themselves until the cheese is melted and the eggs are still very soft.  Remove from heat.


Sweet Harold made some toast triangles for us and I opened up a jar of my homemade strawberry jam.  This was a wonderful breakfast for supper meal!

Here are pictures of the plated potatoes and bacon. You can season the potatoes with simply salt and pepper.  I used my favorite seasoning blend of the moment: Kinder's Buttery Steakhouse Seasoning.
