I recently was a Judge at a BBQ cookoff and the contestants were allowed to serve side dishes along with their pork entries. One plate had a delicious side salad with apples and grapes with an out of this world dressing.
I made it a mission to try to duplicate the salad and with the addition of pecans, I am well pleased with my version.
This salad could be served alongside a light lunch or even as a dessert. It's that good!
Feel free to double the ingredients if you'd like and also to use a mixture of red/green grapes.
4 oz. cream cheese, softened
6-8 oz. sour cream
1/4 cup white sugar
1 t. pure vanilla
1 large Red Delicious apple
1 large Granny Smith apple
2 cups halved seedless red or green grapes or a mixture of both
1/2 cup finely chopped pecans
1 - 2 t. light brown sugar
In a medium mixing bowl, using a hand mixture on medium speed, blend together the cream cheese, sour cream, sugar, and vanilla until smooth and creamy.
In a large mixing bowl, add the fruit, pour the dressing over, and gently stir to combine. Add about 3/4 of the pecans and stir.
Refrigerate until ready to serve. At that time, sprinkle the remaining pecans and light brown sugar on top.
