If you've been following along with our weekend adventure either here or on my Facebook page, you know that we spent the weekend in Vicksburg, Mississippi participating as judges of a KCBS BBQ competition.
Today we traveled home and while you think we'd want ANYTHING for lunch except BBQ, you'd be mistaken. By the time we drew near to Meridian, we were ready to eat. I checked online for a BBQ restaurant and came across Squealer's BBQ. To show how much we wanted to try them out, their location is not located as an "easy off the interstate/easy back on the interstate." But that was fine with us and with the address in the GPS, we were a couple on a mission.
Regular readers of the blog know that I have three criteria for a BBQ restaurant:
1: Do you see hickory or pecan stacked anywhere near the restaurant? Why yes, yes, I did!
3. Do you see smoke? If you think that through, you'll know if you SMELL BBQ cooking, there's going to be smoke!
We were warmly greeted when we entered and told to choose seat wherever we wanted. Alex was our server today and he was the best. The restaurant became busy after we ordered and he and his fellow server were getting it done today!
When you order your beverage, be prepared for a quart size.
And how nice to have a fresh basket of pork rinds to munch on while you choose what you'd like for lunch? These were nicely fried and had a powdery seasoning that carried some heat!
The pulled pork was served on a Hawaiian style bun that was nicely browned. Look closely on the bottom bun. That step makes such a difference in a sandwich!
Now to the pork. There was a generous serving size on the sandwich. The pork had a subtle amount of smoke which is ideal. You don't want to be overwhelmed with the smoke flavor.
There was no sauce added to the sandwiches because you're offered three different flavors to add yourself. The sauce should enhance the flavor of the pork, not take over the show. We tried all three. We even used the sauce instead of ketchup for our fries. As always, I loved the hot. So that's what I used for the French fry dunking. The original flavor had just enough of a spice to let you know it's there. The honey version would be delicious on the chicken (in my opinion). The sauces are all extremely thin so be careful when pouring. The consistency allows the sauce to soak into the bun.
And if you haven't had enough of those pork rinds, you can bring a bag home with you!
I wish we lived closer. I'd love to eat my way through the menu.
Again, if you're traveling on I-59, take a little time to drive to Squealer's and enjoy a delicious BBQ sandwich or any of the selections they offer.
I've lived and traveled across the country, and Squealer's has set a precedent in regards to good food and even better people that has yet to be met elsewhere.

DeleteAs someone's whose first job was at this particular BBQ joint, I loved reading your blog. Felt like I was with you for the journey. The owner is wonderful as well. I no longer live in MS. So please believe that is one of my first stops every visit home. Thank you for kind words.
