Blackstone Griddle: Diced Zucchini and Yellow Squash

 


When you're cooking the main course on the Blackstone, don't forget it's a great idea to cook your side dish there as well!  

Steak Tips with Portabella Mushrooms was the main event, but the zucchini and yellow squash didn't play second fiddle.  I had three small/medium zucchini and yellow squash.  I scrubbed them well with a vegetable brush, trimmed the ends, and then cut into a small dice. Try to keep the sizes of the pieces uniform so they'll cook evenly.

I put them into a medium bowl, lightly drizzled with olive oil, and then sprinkled with seasoned salt.  Use a wooden spoon to make sure everything is evenly coated.


Preheat the Blackstone Griddle to medium heat and lightly coat the cooking surface with olive oil.  Spread the vegetables out in an even layer and let them cook for 3 - 4 minutes or until they begin to brown.


This is a super easy and delicious side dish!
