Y'all know how I love to rework leftovers into an entirely different meal. I served ground beef tacos earlier in the week and cooked extra beef to have for a few different meals.
If you've never made a taco pizza, I'm going to encourage you to do so! With a premade crust and the taco fixings you have on hand, this recipe is a breeze to make and to enjoy.
1 Mama Mary's premade pizza crust
2 T. olive oil
1/3 - 1/2 cup taco sauce
2 cups shredded Mexican blend cheese, divided
3/4 - 1 cup cooked seasoned taco meat
1/2 yellow onion, cut in half lengthwise and thinly sliced into slivers
1 jalapeno, seeded and thinly sliced
1 - 2 T. finely chopped cilantro
Preheat oven to 425 degrees F.
Place pizza crust on a cast iron pizza pan or a pizza stone. Brush with the olive oil.
Spread taco sauce on the crust. Scatter the taco meat over the sauce evenly. Sprinkle with 1 3/4 cup Mexican blend cheese and then add the onions and jalapeno. Add the remaining cheese on top.
Bake for 13-15 minutes until the crust has browned and the pizza is browned and bubbling. Add cilantro and serve immediately.
