Blackstone Griddle: Ham and Egg English Muffin Breakfast Sandwiches



I had been mentally pondering this recipe all week.  I couldn't wait for this morning to try to make it a reality.  Our breakfast exceeded all my expectations.  

For each breakfast sandwich you'll need an English Muffin, a tablespoon (more or less) of diced ham, an egg, and a slice of American cheese.  

Here's how it played out! 

Preheat your Blackstone griddle on medium.  Split the English muffin in half and place a pat of butter down on the griddle.  Use a metal spatula to spread it out on the section where you'll place the English muffins. Let them brown a bit and continue flipping them over until they reach the brownness you like.  Move them to the cooler section of the griddle.

  

While the muffins were browning, I sprayed the other end of the griddle with Pam and placed two servings of mini-hash browns down. As with the muffins, continue flipping the hash browns until they are browned and cooked through. Then, move them to the cooler portion of the griddle.


Now, back to the breakfast sandwiches!  Put another pat of butter onto the griddle and add the diced ham.  Lower the heat to low and allow ham to brown.


You'll need these silicone egg rings to make the perfect shape for your breakfast sandwiches.  

Place the egg ring down onto the griddle and add a 1/2 t. of butter. Add a tablespoon of ham into each ring.


I made two sandwiches, so I broke two eggs into a measuring cup and added salt and pepper.  I whisked the eggs and then poured the mixed eggs into the rings in equal portions.


At this point, I turned the heat off.  I used the squirt water bottle and added about a tablespoon or so of water and immediately covered with the steaming dome.  This allowed the top of the eggs to begin to set.  After a minute or so, the top of the eggs were cooked enough that I could remove the rings and, using the metal spatula, flipped the eggs.  I then topped the eggs with American cheese, added a little more water and covered with the dome again to allow the cheese to melt.


Then it was time to assemble! I placed the egg round onto the bottom slice of the English muffin and topped with the top slice.  Let's eat!
