I recently got a great deal on chuck steaks or, as they're sometimes referred to, Chuck Tender Steaks. Now that name is somewhat misleading. Remember when you're checking out different cuts of meat if you see tender in the name, unless "loin" is involved, you're not necessarily going to purchase a tender cut of meat. However, all is not lost! If you marinate the beef, or cook it by braising or in the Instant Pot, you can definitely have a delicious meal.
I wanted to sear the steaks and then up the flavor with onions and mushrooms. For the liquid, instead of using beef broth, I used a can of Campbell's Beefy Mushroom Soup. After cooking, I used the broth to make a delicious gravy.
This recipe would be delicious served over rice or mashed potatoes. But I served the steaks with air fryer baked potatoes, a tossed salad, and yeast rolls.
1 - 2 lbs. chuck tender steak
salt
pepper
granulated garlic
1 T. vegetable oil
1 yellow onion, thinly sliced
8 oz. sliced white mushrooms
1 can Campbell's Beefy Mushroom Soup
2 T. flour
2 T. water
chopped parsley for garnish
Lightly season the steaks with salt, pepper, and granulated garlic. Set aside.
Set Instant Pot to saute' setting and add oil. When oil is hot, add steaks to the inner pot and begin to sear. Flip after a few minutes of browning and let the other side brown. Remove steaks from inner pot to a plate and set aside.
Add onions and mushrooms to inner pot and, stirring constantly, allow vegetables to soften, 3 - 4 minutes.
Pour in Beefy Mushroom Soup, scraping up any browned bits from the bottom of the inner pot. Return the steaks to the inner pot and cancel the saute option.
Place lid on the Instant Pot and set valve to closed. Set to Pressure Cook and the time to 14 minutes. Allow to come to pressure and cook. Let the Instant Pot pressure naturally release and when pressure has released, carefully remove the lid.
Remove the steaks to a serving plate and strain the cooking liquid into a saucepan. Bring the liquid to a boil. In a small bowl, combine the flour and water to form a slurry. Slowly pour the slurry into the liquid and whisk to combine. Lower heat to a simmer while the gravy thickens. When the gravy has thickened, add in the mushrooms and onions. Ladle over the steaks, garnish with chopped parsley, and serve immediately.
