New Year 2023 Brunch with Buttermilk Biscuits


We had a late New Year breakfast/brunch!  I fried up the very last of the Christmas ham (😢), home fries, cheesy scrambled eggs, and buttermilk biscuits.  I love attempting different variations of homemade biscuits.  I selected the Southern Living Cookbook:  1,250 Recipes for Everyday Cooking from the bookshelf and put away the lard AND the shortening that I thought I'd need to bake biscuits.  Instead, I headed to the refrigerator for a stick of cold butter!  These biscuits were tender and soft and absolutely delicious.  They mixed together quickly and with a couple of kneads of the dough, were ready to be patted out, cut, and popped in the oven.

1/3 cup cold butter, cut into pieces
2 cups self-rising flour (I always use White Lily)
3/4 cup cold buttermilk
Melted butter

Cut 1/3 cup butter into flour with a pastry blender until mixture is crumbly; add buttermilk, stirring until dry ingredients are moistened.

Turn dough out onto a lightly floured surface; knead 3 or 4 times.  Pat or roll dough to 3/4 inch thickness; cut with a 2 1/2 inch round cutter, and place on a lightly greased baking sheet.

Bake at 425 degrees F. for 12 - 14 minutes or until golden.  Brush with melted butter.  

Makes 8 biscuits.
