Sautéed Mushrooms, Canadian Bacon, and Spinach Two Egg Omelet


Sweet Harold offered to cook breakfast for me and, when he does that, I always gratefully accept!  He makes a wonderful omelet and I look forward to see what combination he comes up with each time.

This morning's version included mushrooms, Canadian bacon, and spinach with pepper jack cheese.  Doesn't that sound like a yummy combination?

A quick saute' of the vegetables and a few minutes of freshly shredding of the cheese and the omelet ingredients were ready to be assembled into this delicious breakfast!


This recipe makes two generous serving omelets.

2 T. butter, divided
3 Canadian Bacon round, diced
3 white button mushrooms, diced
1/2 cup baby spinach
4 eggs
salt and pepper to taste
1/2 cup freshly shredded pepper jack cheese, plus additional for topping

In a small non-stick skillet, over medium high heat, add 1 T. butter and swirl it around to coat the bottom of the skillet.  Add the Canadian Bacon and mushrooms and cook for 4 - 5 minutes until the bacon browns.  Add the spinach and cook another 4 - 5 minutes until the spinach wilts and the liquid has evaporated.

Place the Canadian Bacon and veggies in a small bowl and wipe skillet clean.

Add 1 T. butter to skillet and swirl to coat the bottom of the skillet.  

In a bowl, whisk two eggs with salt and pepper to taste.  Pour the egg mixture into the skillet over low heat and let cook for 1 minute.  Carefully lift the edges of the cooking eggs with a rubber spatula slowly tilting the pan to let uncooked eggs run onto the bottom of the skillet.

Cook for a minute or so until the center of the omelet just begins to set, but it still soft.  Spoon half of the bacon/veggie mixture over the middle of the omelet.  Sprinkle with half of the cheese.

Carefully run the spatula around the edges to loosen from the pan and fold in half.  Slowly slide the omelet onto a serving plate.  Top with additional cheese as garnish.  

Repeat with the remaining ingredients for the second omelet.

  1. Thanks for the idea. I have a huge container of mushrooms, salad mix that contains spinach and a whole bunch of duck eggs. Yum!
