I continue to search for products that are lighter in carbs. I've learned through the years, that for me, it's best I don't go on a "diet." But, if I can eliminate a few calories here and there, limit extra carbs when I can, and enjoy healthy options when possible, that works best for me.
So when a friend posted about these tortillas on social media a few days ago, I knew I wanted to try them for myself to see if I could tell any difference in taste or texture. I was very excited to learn that I could tell absolutely no difference in these tortillas and those I usually purchase. An added bonus is that they are only 25 calories each!
I can think of using these for chicken and cheese mini-quesadillas, breakfast mini-tacos, or for lunch as a meat and cheese wrap.
But for tonight's meal, I decided on ground beef street tacos.
1/2 lb. ground chuck
2 cloves garlic, minced
1/8 cup taco seasoning or 1/2 package taco seasoning
1/2 cup water
Mini zero carb tortillas
Shredded pepperjack cheese
Diced onions
Taco sauce
Chopped cilantro or parsley
In a medium skillet over medium heat, brown ground chuck separating it with a wooden spoon or spatula. When browned, drain off any fat and add the garlic. Let cook for a minute or two and then add the taco seasoning and water. Lower heat to low and let cook for 2 minutes, stirring frequently. Remove from heat.
In a small dry skillet, over medium-high heat, place one tortilla at a time and let heat through just until the tortilla begins to brown. Flip and repeat.
Place warmed tortilla(s) on a plate and place about a tablespoon of taco meat in the middle. Top with your choice of toppings.
I served these with chicaronnes (pork skins) because they're zero carbs as well! This recipe made 8 (generous) mini-tacos.
