Shrimp and Cabbage Soft Tacos

 


This will be one of the easiest meals you'll ever prepare.  A few minutes in the wok for the shrimp, a few minutes in the skillet for tortillas (or for even faster prep, pop them in the microwave following package directions), and use bagged finely shredded cabbage.  Voila!  Dinner is finished!

1 lb. medium shrimp, shelled and deveined
1 T. olive oil
1 T. minced garlic
Soft tortillas
2 cups finely shredded cabbage
Extras:  taco sauce, cilantro, lemon slices

Place the shrimp in a medium bowl and season with the Kinder's Seafood blend.  Toss to coat the shrimp.

Heat the olive oil in a wok or large skillet over high heat.  When a drop of water sizzles when dropped into the oil, add the shrimp carefully.  Add the garlic.

Stir fry the shrimp, tossing them constantly.  The shrimp will cook quickly.  Remove from heat when the shrimp are pink and opague.


Using a dry skillet, add the tortillas one at a time and let them begin to brown.  Flip and let the other side brown.  Repeat with remaining tortillas.

Add shredded cabbage to the tortilla, top with the shrimp and top with cilantro, taco sauce, and offer lemon slices to squeeze on top of the shrimp!
