Keto Peanut Butter Fat Bombs


As you may or may not know, when following a Keto diet plan, you need healthy fats for energy since you are limiting carbohydrates which your body normally uses for energy.

There are sweet and savory versions of fat bombs and I'll be sharing more as we go along on this dietary journey.

They are a keto-friendly way to add healthy fats into your diet, and they will not affect your ketone levels. Fat bombs don't spike glucose levels like other sweets might, so you can safely enjoy them on the keto diet.

They're great to have on hand in the refrigerator when a sugar craving strikes, or if you need to add that little bit of fat at the end of the day.
 
4 oz. softened cream cheese
1/4 cup creamy peanut butter
1 T. granulated Stevia
(cocoa or grated dark chocolate for coating - optional)

In a bowl, combine the cream cheese, peanut butter, and Stevia.  Stir until thoroughly combined.

Roll portions into a large marble sized bombs.  You can roll them in cocoa or finely grated dark chocolate if you'd like the peanut butter/chocolate flavor combo.

Arrange on a parchment paper lined baking sheet.  Place in the freezer for 2 hours until set.  After 2 hours, you can place in a Ziploc bag and store either in the freezer or fridge.


Trust me, you'll probably want to make a double batch!
