Ham and Goat Cheese Crustless Quiche


One of the things about a keto or low carb diet, you can certainly enjoy your fill of eggs, bacon, ham, sausage, and cheese!

I enjoy making new combinations for breakfast and today's recipe with diced ham, cheddar and goat cheese, eggs, and heavy cream fit the bill nicely.

3/4 cup diced ham
1 T. butter
6 eggs, lightly beaten
1/2 t. salt
1/2 t. black pepper
2/3 cup heavy cream
1 1/2 cups of coarsely shredded cheddar, plus 1/2 cup for topping
2 oz. softened garlic and herb goat cheese
chopped chives for garnish

Preheat oven to 350 degrees F.  Melt butter in a 10 inch skillet over medium heat.  Brown ham in the melted butter and remove to a paper towel lined saucer.  

Whisk together eggs, salt, pepper, and heavy cream.  

Stir in the 1 1/2 cups of shredded cheddar along with 1/2 cup of the diced ham.  Reserve 1/4 cup of the ham.

Pour egg mixture into a greased deep dish pie plate.  Using your fingers, crumble the goat cheese and sprinkle it evenly over the egg mixture.  Place in oven.  Bake for 20-20 minutes.  Remove from oven and top with remaining cheddar cheese and remaining ham.  Return to oven for 3 - 4 minutes.  Remove from oven and top with chopped chives.

Let rest a minute or so before slicing and serving.
