On a recent visit to Sam's, I grabbed a package of frozen flounder fillets. We're still striving to incorporate keto or low carb meals into our world. This is a super fast recipe because the fish cooks so quickly and the flavor was delicious. The parmesan adds a nice little crunch to the coating and the Kinder's Seafood Blend seasoning was perfect.
Flounder is a firm saltwater fish that is mild in flavor and taste. There's nothing fishy about flounder is that's a concern.
The pan frying results in a tender and flaky piece of fish which is perfect for a light lunch or dinner. I served with freshly made coleslaw and a lemon wedge for squeezing over the fish.
1 egg
1 t. water
1/2 cup almond flour
1/4 cup grated Parmesan
1/2 t. kosher salt
1/2 t. freshly ground black pepper
4 (6 oz.) flounder fillets
oil for frying
Crack egg into a bowl and whisk with the waster.
On a shallow plate, combine the almond flour, Parmesan, Seafood Blend seasoning blend, salt, and pepper by gently stirring with a fork.
Pat the flounder dry with paper towels. Dip each fillet into the egg mixture and then press into the breading, completely coating both sides of the fish. Place each breaded piece onto a plate while you bread the remaining pieces.
Heat oil in a large skillet over medium-high heat. You want a thin layer of oil in the skillet.
Cook for 5-7 minutes until golden brown and cooked through. Add additional oil if needed. Don't crowd the skillet. I cooked two pieces at a time.
Drain the fish on a paper-towel lined plate.
Serve with lemon wedges.
I made a keto based tartar sauce by combining the following:
1/2 cup Duke's mayo (it's sugar free)
1/2 t. Kinder's Seafood Blend seasoning
squeeze of lemon
1/2 T. dill relish
