Tzatziki


I continue to have fun with recipes from my cookbook, Greek Culinary, that was gifted from my daughter and granddaughter after they returned from their trip to Greece.

Recently, I prepared a simple tray of goodies for our lunch featuring a recipe for Tzatziki which is a dip/sauce made with yogurt and garlic along with a few other ingredients.  

I paired that with some sliced salami, feta cheese, dill and onion flavored cheese, grapes, pitas, seeded crackers, and purchased lemon flavored hummus.  It was a great lunch!



If you haven't tried Sabra Lemon Twist Hummus and you're a lemon lover like me, pick up some and give it a taste.  I topped with a little extra lemon zest to up that lemon flavor!

Now on to the tzatziki!


16 oz. strained Greek yogurt
1 cucumber
3 garlic cloves finely grated
3 T. vinegar
3 T. olive oil
salt, pepper

Peel, grate, and drain the cucumber very well.  Sprinkle it with salt and vinegar and leave to strain out.  Put the cucumber in a bowl with the rest of the ingredients.  Mix them well.  Leave the tzatziki in the refrigerator for 2 hours before serving.  

Serve with pita chips or fill a pita with salami and drizzle with the sauce.
