When cold weather hits, I always get hungry for a childhood favorite meal: beans, greens, cornbread, some form of potato, and salmon patties! I know a lot of people don't care for salmon prepared this way, but it was a staple of our family growing up.
Instead of frying in a skillet, and having to deal with the accompanying mess on the stovetop, I decided to try cooking these in the air fryer. Success!! They cooked quickly and evenly and no mess.
Let's cook some salmon patties!
1 (14.5 oz.) can salmon, drained with skin and bones removed
1 T. Kinder's Seafood Blend seasoning
1/3 cup panko bread crumbs
2 eggs, lightly beaten
1 T. chopped parsley
2 T. finely chopped red onion
1 clove garlic, chopped
1/2 t. kosher salt
1/2 t. freshly ground black pepper
In a medium bowl, combine all ingredients and shape into four equally sized patties. Place on a plate and refrigerate for 10 - 15 minutes.
Preheat air fryer at 400 degrees F. Spray the basket with olive oil spray. Place the salmon patties in the basket and lightly spray with the olive oil spray. Place the tray in the air fryer and cook for 12 -14 minutes, turning the salmon over half way through the cooking time.
You can serve these with tartar sauce, a squeeze of lemon, or ketchup!
We love them and have them occasionally. I cook them on a sprayed griddle pan. No oil.
