Buttery Parslied Potatoes

 


Yes, I know I am ATTEMPTING to watch my carb intake.  But with this meal, you have to have some type of potato, right?

With just the two of us, it's difficult to use up a 5-lb. bag of potatoes before they go bad, so I keep a couple of cans of whole potatoes in the pantry.


I opened these and drained them of the liquid.  Then into a shallow skillet where I added some butter, salt and pepper, and a teaspoon or so of chopped parsley.

A few minutes of heating on low, and stirring occasionally, and they were ready to serve!


So simple, fast, and a great addition to this Sunday Supper!

  1. Nothing wrong with canned veggies to me. With busy lives, they make getting supper on the table a whole lot easier.
