Fried Spinach - Lonesome Dove Bistro, Fort Worth



I've always heard that in the South we will fry anything.  Of course, when I saw this recipe I knew I had to try it.  Interesting texture...light and airy and when eaten, the spinach just dissolves in your mouth similar to cotton candy.

1 quart peanut oil
1/4 pound fresh spinach, washed and dried well
kosher salt to taste
cracked black pepper to taste

Heat peanut oil in a saucepan to 350 degrees.

Place spinach in a strainer, colander, or fry basket and set into hot oil.  Note: as the spinach cooks, it will pop loudly from the water that is in the greens.

Fry for about 30 seconds, remove, and place on paper towels to drain.  Season with salt and pepper.  Spinach should be crispy and very light.  Serve immediately.
