Instead of frying whole jalapeno peppers stuffed with cheese, I made up my own filling, stuffed and baked them. Try to find peppers uniform in size so they will cook in approximately the same time.
6 jalapenos, washed, halved lengthwise and seeds removed
4 oz. cream cheese softened
1/4 cup Mexican blend cheese
1 t. chili powder
1 T. crumbled bacon
1 t. chopped cilantro
1/2 t. minced garlic
Preheat oven to 375 degrees. Lightly spray a small baking dish with non-stick spray.
In a small bowl combine the cheeses, chili powder, bacon, cilantro and garlic.
Using a teaspoon, gently fill each jalapeno half and place into prepared baking dish.
Bake for 10-12 minutes until the pepper is soft and the cheese begins to melt. Garnish with additional cilantro if desired.
