Fried Yellow Squash


How many ways can you prepared yellow squash?  Fried, steamed, stewed, stir fried, put into casseroles, made into fritters, etc. etc.

One of the true joys of summer for me is being able to prepare and enjoy the fresh vegetables from the garden.  And even though I know it's not the most healthy way to eat yellow squash, sometimes I simply must have them sliced, breaded in cornmeal and fried.  And that is what I did last night.

3 medium yellow squash, washed, ends trimmed and sliced 1/2 inch thick
2 cups self-rising corn meal with a little salt and pepper added
Peanut Oil (or if you're going old school, bacon drippings)

Heat oil in cast iron skillet or deep fryer to a temperature of 375 degrees.

Dredge yellow squash slices in cornmeal mixture.  Shake off excess and fry squash until golden brown.  

Drain on a paper towel lined plate and serve immediately.
