The granddaughters loved these cookies that were waiting for them when they got up from their naps today. More cake than a cookie or maybe they're more cookie than a cake? Bake them and you decide.
1 box white cake mix
2 eggs
6 T. butter, melted and cooled
green food coloring (I used 10 drops, use more or less depending on the depth of color you want)
1/8 t. mint extract
1/2 cup powdered sugar
1 t. cornstarch
Preheat oven to 375 degrees.
In a shallow bowl, combine the powdered sugar and cornstarch. Set aside.
In a large bowl, combine cake mix, eggs and butter. When thoroughly combined, stir in food coloring and extract.
Line a baking sheet with parchment paper. Roll a tablespoon of the mix into a ball with your hands and then roll in the powdered sugar mixture. Place on baking sheet. and bake 10 - 12 minutes in the preheated oven. Test with a toothpick. When the toothpick comes out clean, they're done.
Let cookies rest on cookie sheet for a minute and then move to cooling rack.
