Shrimp Tacos - Two Ways


We're still enjoying the shrimp from the July 4th Shrimp and Crab boil. I peeled these remaining shrimp, heated some flour tortillas and went to work loading up the tortillas with all sorts of goodness!

You can purchase already cooked peeled shrimp, or simply boil your own until they are bright pink. Drain and immerse in ice water to stop the cooking and peel.

Heat tortillas in a skillet on the stovetop over medium high heat until they begin to puff up and brown.

I had on hand shredded Mexican blend cheese, sour cream, my homemade picante sauce, cilantro/almond pesto, salsa verde, chopped tomatoes, and sour cream.  

Of course, guacamole, diced jalapenos, onions, etc. would have been wonderful as toppings as well.
