Soft Fried Skillet Potatoes and Onions with Chives

 


This is a classic recipe from my mama.  I've been thinking about this extremely simple side dish for weeks and decided to make it today.  I often wonder how she came up with this idea.  Maybe she got tired of making mashed potatoes?  Maybe her grandmother made them this way for her when she was a little girl.  Yet another thing I neglected to ask her.

These are NOT French fried potatoes.  They're cooked very slowly over very low heat.  The potatoes softly cook while the onions become sweet and caramelize.  You can season with just salt and pepper, but I used a little Hardin's Seasoning.  My mom also didn't add the chives, but I had some fresh from the herb garden and they added a nice flavor to the dish.

There's really not a recipe per se here; it's more of a process.  So here we go.

I used 4 medium potatoes, peeled and sliced lengthwise and then sliced about 1/8" thick
1 large yellow onion, halved lengthwise, and thinly sliced
1 T. vegetable oil
salt and pepper to taste
1 - 2 t. thinly sliced chives

In a large skillet heat oil over low heat.  Add potato slices and onion slices.  Cook 15 - 20 minutes, stirring occasionally.  When the potatoes are fork tender, you're ready to serve.  Remember, you want everything to cook slowly.  

Season and top with chives if using.
