Blackstone Griddle: Sliders with Grilled Onions

There are thousands of smash burger recipes online.  This is my semi-smash burger method.  I made these a tad smaller to fit on King's Hawaiian slider buns.  I chose a 70/30 blend to get that added flavor from the extra fat in the beef.  A simple sprinkle of seasoned salt was the extent of my seasoning.  When you're ready to serve the burgers, don't forget to butter the buns and place on the griddle to toast for a minute or two.  It makes a huge difference to the flavor of the burger.

3 T. butter (divided)
2 medium yellow onions, cut in half and then thinly sliced
seasoned salt
1 1/2 lbs. ground beef loosely shaped into 2" balls
King's Hawaiian slider buns
Your favorite cheese (if desired) and assorted condiments

Preheat the Blackstone griddle on high, then lower to medium high heat.  Place 1 T. butter on the griddle and spread over the griddle with a metal spatula.  Spread the onions evenly and let them cook, stirring occasionally, until they reach a deep golden brown color.  Move them to one end of the griddle.

Add another tablespoon of butter on the griddle, spread it evenly, and then add the beef.

Immediately press down with a heavy metal spatula or a bacon press to allow the sliders to form a crust on the griddle.  Sprinkle with seasoned salt.  The sliders are so thin that you'll only need to cook for a minute or so on each side.

Don't forget to butter those buns with the remaining 1 T. butter and toast them!

Especially during these hot days of summer, being able to caramelize onions, griddle burgers, and toast the buns is so much nicer than having to heat up the kitchen!
