Beef Taquito Casserole

 


Regular readers of the blog know that some of my favorite recipes come from great deals I find at the grocery store.  This week, I found a great deal on a large box of frozen taquitos at Sam's Club.  

If you're unfamiliar with taquitos, they are a Mexican dish typically made with a small rolled-up corn tortilla that contains either beef or chicken and cheese.  The filled tortilla is then tightly rolled and deep-fried.

I found this recipe on the Pillsbury website.  I altered it slightly to use what I had on hand in the pantry.  This was a quick and easy casserole to assemble and we both enjoyed our meal!

1 small package yellow rice, cooked according to package directions
1 (14.5 oz. can) corn kernels, drained
1 (15 oz. can) black beans, rinsed and drained
1 T. taco seasoning
1 (10 oz. can) red enchilada sauce
2 cups finely shredded Mexican cheese blend
1 (20 oz. box) frozen beef taquitos (or you can use chicken)

  • Heat oven to 375°F. Spray 13 x 9-inch (3-quart) glass baking dish with cooking spray. 
  • In large bowl, stir cooked rice, corn, beans, taco seasoning, enchilada sauce and 1 1/2 cups of the cheese until well blended; transfer to baking dish.
  • Top mixture with taquitos. Bake for 35 minutes, top with remaining ½ cup cheese and bake for an additional 5 to 10 minutes until cheese is melted and taquitos are heated through. Serve with chopped fresh cilantro, sliced green onions, chopped tomatoes, sour cream, if desired,
