Alabama Power Bill Recipe: Chicken Tetrazzini


It's time to share another one of those recipes that are provided in our monthly power bill.  This recipe is provided by Lynda Hinkle of Pinson, AL.

Reviewing the ingredient list, I knew this dish would be delicious.  It was super fast and easy to mix together and the cook time was only 30 minutes.  This would make a great weeknight dish.

1/2 cup chopped onion
1 stick butter
1 t. flour
1 t. salt
1/4 t. pepper
1 can cream of chicken soup
1 1/4 cups chicken broth
1 cup half and half
1 small jar diced pimento
3-4 cups chicken breast, cooked and either chopped or shredded
1/4 cup Parmesan cheese
8 oz. think spaghetti, cooked according to package directions
2 1/2 cups shredded sharp cheddar cheese

Saute onion in butter in a large skillet over medium heat.  Add flour, salt, and pepper.  Stir on medium-high heat for about one minute.  Gradually add soup, broth, half and half, and pimentos.  When this comes to a boil, remove from heat and add chicken.  

Drain spaghetti and dot with butter and sprinkle with Parmesan cheese.  Mix the noodles in with the sauce and pour into a 9 x 13 baking dish.  Top with grated cheddar cheese.  

Bake at 350 degrees F. for 30 minutes or until bubbly.  


I let the casserole rest for about 5 minutes and then sprinkled some chopped parsley on top before serving.
