Carbquik Garlic Cheddar Biscuits

What if I told you that this Garlic Cheddar Biscuit (which very closely resembles that popular lobster restaurant's version) has only 2 net carbs?  Yes, it's true!

A friend recently told me about Carbquik which allows those who are seeking a low(er) carb lifestyle, but still want to enjoy those baked goodies.  I was skeptical, but decided to buy a box and give it a try.

For our meal today, I had planned on making a keto soup and I knew we would enjoy some sort of bread to go alongside.  So, I took the plunge and baked a pan of garlic cheddar biscuits.

The recipe stated it would make 10, but I had 11.  Woo Hoo one more to have later!  They were delicious, although a little crumbly.  But with soup, they were just fine.  I'll definitely be making them again.

Here's the recipe straight from the Carbquick box.

2 cups CarbQuik Low Carb Baking Mix
2 oz. butter, cold
1/2 cup shredded cheddar cheese
1 pinch garlic powder
1 pinch salt
1/4 cup heavy cream
1/4 cup water
For topping:
2 T. melted butter
1 t. chopped parsley
1/4 t. granulated garlic

Preheat oven to 450° F.

Cut the cold butter into the Carbquik with either a pastry cutter or two knives, till the mixture resembles coarse meal.

Add the shredded cheese, a pinch of salt, and garlic powder and blend well.

Mix the heavy cream with water to equal ½ cup of liquid, pour into dry mix.

Mix till dough forms and comes together, but do not overwork the dough.

Drop the dough onto a lightly greased cookie sheet approx 1-ounce size portions.

Bake in hot oven 8-10 minutes till biscuits are golden brown.

While baking, in a small bowl, combine the melted butter, parsley, and granulated garlic.  When biscuits are removed from oven, brush the tops with the garlic butter mixture.  Serve immediately and enjoy!
