Instant Pot: Keto Tuscan Italian Soup with Spinach


Low carb meals continue here at Chez Lolly and I'm proud to report that I've lost 9 pounds in three weeks! This soup is so super easy and fast.  I got it cooking in the Instant Pot while I mixed up these Carbquik Garlic Cheddar Biscuits.  When the soup was ready to quick release and add the spinach and cream, the biscuits only needed a few more minutes in the oven.  By the time they were finished baking, the soup was ready to ladle into the bowls.  Talk about a perfect weeknight meal, this is it!  Plus the soup is Keto, but so filling.  You could even add some crumbled bacon if you'd like.  

There was more than enough for the two of us with a big storage bowl for leftovers on in the week.

1 lb. hot or mild Italian sausage, casings removed
1 large onion, chopped
3 cloves garlic, minced
1 t. dried oregano
1 (14.5 oz.) can diced tomatoes (basil, oregano) (drained well)
Salt and freshly ground black pepper
6 cups chicken broth
3 cups packed baby spinach
3/4 cup heavy whipping cream
1/4 cup freshly grated Parmesan, for serving
Fresh chopped parsley, for serving
 

Set a 6-qt Instant Pot to sauté mode. Add Italian sausage to the insert of the Instant Pot and cook, breaking up with a wooden spoon, until sausage is lightly browned, about 3-5 minutes. Drain excess fat.

 

Add garlic, onion, and oregano to the Instant Pot with the sausage meat. Cook, stirring constantly until onions have become translucent, about 2-3 minutes.

 

Stir in chicken broth and tomatoes; season with pepper, to taste.

 

Select manual setting on your Instant Pot; adjust the pressure to high, and set the timer for 5 minutes. When finished cooking the soup, do a quick-release.

 

Select sauté mode and stir in spinach to the soup until wilted, about 1-2 minutes. Stir in heavy cream until heated through, about 1 minute; then adjust seasoning of the Tuscan keto sausage soup with salt and pepper, to taste.

 

Serve the soup immediately with fresh grated Parmesan and parsley.
