Bear Creek Creamy Potato Soup

For our St. Patrick's Day meal this year, I decided to try yet another Bear Creek product:  Creamy Potato Soup Mix.

This variety was also delicious and all the diners at our party agreed that this is one they'll keep in the pantry for quick dinners.

I "doctored" it up a bit when serving and everyone was pleased with their soup course.

To make the soup:

1 envelope of Bear Creek Cream Potato Soup mix
8 cups water

Heat the 8 cups water in a soup pot until it reaches a rolling boil.  Pour in the soup mix and whisk constantly until the soup mix combines with the water.  

Lower the heat so the soup will be at a gentle simmer.  Let cook for 15 minutes, stirring frequently so that it doesn't stick.

Ladle into individual bowls and top with cooked crumbled bacon, chives, and shredded cheddar cheese.  Serve immediately.
