Bear Creek Vegetable Beef Soup


Today was time to try another product from Bear Creek!  They just keep getting better and better.  You can make this in the most simple form with only the packaged mix, a pound and a half of stew meat, and water OR you can raise it up a little by adding diced tomatoes and spinach or kale.  Here's what I did!




1 T. olive oil
1 1/2 lb. stew meat cut into bite sized pieces
8 cups water
1 package Bear Creek Vegetable Beef Soup mix
1 (14.5 oz.) can diced tomatoes
2 cloves garlic, minced
3 cups spinach or kale torn into bite sized pieces

Add olive oil in a large soup pot or Dutch oven over medium-high heat.  Add stew meat and cook, stirring frequently, until meat has browned.

Add the water to the pot and increase heat to high to bring it to a boil.  Stir in the soup mix to combine.  Add in diced tomatoes and garlic.  Reduce heat to a simmer and let soup cook for 15 minutes, stirring occasionally.

Stir in spinach or kale and let cook for an additional 10 minutes until the greens have wilted.



Ladle into individual serving bowls and serve with warm bread.

  1. I've got a pot of this soup in my fridge right now. I didn't add anything but meat and a can of diced tomatoes to it. I like it.
