Blackstone Griddle: Chicken Fajitas with Kinder's Seasoning and Cooking Sauce and Glaze

Tonight was the night to try two new products!

I thinly sliced 1 pound of boneless/skinless chicken breasts.  Then I thinly sliced 1 medium yellow onion and 1 large green bell pepper.  You can mince as much garlic as you want...but really how much IS too much?  Choose your own favorite brand of tortillas....Carb Balance for us.

Preheat the Blackstone griddle until a drop of water sizzles.  Spray the griddle with olive oil spray.  Put the chicken on the griddle and sprinkle liberally with the Carne Asada seasoning.

Use metal spatulas to separate the chicken and allow it to begin to cook.  Lower heat to medium.

While the chicken begins to cook, add the onions and peppers to the other side of the griddle.  Sprinkle liberally with the Carne Asada seasoning.

Continue using the metal spatulas to toss the chicken while it cooks and do the same with the vegetables.  When the vegetables begin to soften, add in the garlic.

After 5 - 7 minutes, you should have a nice brown color on the chicken.  Remember that color means flavor!

After the chicken is cooked and the vegetables are tender/crisp, mix them together.  Cook another few minutes.

Drizzle with the Fajita Cooking Sauce and Glaze.

Mix together and the sauce will begin to glaze onto the fajitas.

Turn off heat to one side of the griddle and move the fajitas to the far side.  Drizzle with more of the glaze and let the meat and veggies rest while you brown the tortillas.

Spray the other end of the griddle with more of the olive oil spray.  Place the tortillas on the griddle and using tongs, flip the tortillas back and forth until they reach your desired level of doneness.

Place the tortillas in a tortilla warmer until all are browned.

Remove the fajitas from the griddle and divide between the tortillas.  Serve immediately.
