We recently bought some freshly grown and picked blueberries from Tabor Oak Farms. I grew up with one of the owners and have become friends with his wife. They have an amazing farm and I am always happy to share their products in my blogged recipes.
We had friends visiting from Louisiana last week and I sent two quarts home with them. Today was my blueberry cobbler baking afternoon and this is a quick recipe to assemble. About 50 minutes of baking and you're ready to dive in!
This is a great recipe to get the kids involved with making because it comes together in one bowl!
Here's what you'll need!
1 stick butter, melted
1 cup sugar
1 cup self-rising flour
1 cup milk
1 1/2 cups fresh blueberries
Additional sugar for sprinkling on top before baking
Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with non stick spray or grease with softened butter.
In a medium bowl, whisk together melted butter, sugar, flour, and milk. Pour into prepared baking dish.
Sprinkle blueberries all over the batter. Sprinkle with a teaspoon or so additional sugar on top. Place in oven and bake 50-55 minutes until top is browned.
Remove from oven and let cool slightly before serving. You can certainly top it with ice cream, but this is perfect as is!
