Baked Cod with Lemon and Garlic

 


Sweet Harold emailed me a recipe that came across his FB feed a week or so ago.  He loves fish and seafood, so I wanted to make this one for him as soon as possible.

I adapted it a little and I'm not even sure where the original recipe was from so I can't give credit.  But if you like baked fish and the combination of lemon and garlic, you'll love this dish.

4 cod fillets (these were about 6-8 oz. each)
Kosher salt
Kinder's The Seafood Blend seasoning
3 T. olive oil
6 cloves garlic, minced
1 lemon sliced
2 T. fresh lemon juice
1 T. fresh chopped parsley for garnishing
lemon wedges

Preheat oven to 400 degrees F.  Spray a small rimmed baking sheet with olive oil spray.

Pat the fish dry with paper towels and lightly salt both sides.  Then liberally coat with the Kinder's The Seafood Blend seasoning.

In a small bowl, combine the olive oil and garlic.  

Place the cod onto the baking sheet and brush with the olive oil/garlic mixture.  Arrange the lemon slices over the fish and drizzle with the fresh lemon juice.


Bake in the preheated oven for 15 - 20 minutes or until an instant read thermometer reads 145 degrees F.  The cod should be opaque and flake easily with a fork.

Remove from oven and sprinkle with the freshly chopped parsley.  Serve with lemon wedges.

  1. Instead of cod, I would use bass. Since, we love to go bass fishing.
