I love when delicious sounding recipes come across my social media feed! This one certainly caught my attention because Sweet Harold loves eggnog.

2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
2 t. baking powder
1/2 t. nutmeg
1/2 t. cinnamon
1/2 t. salt
1 cup eggnog
1/2 cup vegetable oil
2 large eggs
1 t. vanilla extract
1/2 cup chopped pecans (optional)
Preheat oven to 350° F. Grease a 9 × 5 inch loaf pan.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt.
In another bowl, mix together eggnog, vegetable oil, eggs, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in chopped pecans if using.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
I mixed 3 T. of powdered sugar with 1 T. eggnog. When the bread was completely cool, I drizzled the glaze over the top and let it set before slicing and serving.
I've come close to buying Eggnog a couple of times, but I usually don't drink the whole carton and it gets wasted.
