Tapas Thursday - Mediterranean Couscous Stuffed Tomatoes





Tonight's Tapas Thursday incorporated all sorts of Mediterranean flavors.  I love couscous in all forms and it's so fast and simple to make as a side dish.  With the addition of vegetables and some seasonings and then stuffed into tomato "shells" this was a great summertime meal.  Light AND filling is always a plus.

6 medium sized tomatoes (top 1/4 removed and the tomato pulp removed and reserved, but discard the core)
1 box Near East Couscous cooked according to package directions (only takes 5 minutes!!)
1/4 cup finely chopped cucumber
1/4 cup finely chopped red onion
Pulp from the four tomatoes
1 T. capers, drained
1/2 t. ground coriander
1/4 t. finely chopped oregano
Toasted pine nuts for garnishing

Combine the cooked couscous with the next 7 ingredients.  Gently spoon into tomato shells and topped with toasted pine nuts if desired.

You can fill additional tomatoes of course or save the remaining filling, add some shredded cooked chicken and have a lovely salad.  In fact, that's what I think I will do!
